Natural Colorants

As food & beverage manufacturers respond to the FDA’s regulations on food dyes, many petroleum-based dyes are on their way out of the U.S. food supply. Products free of synthetic dyes can now carry a “no artificial colors” claim, and the FDA approved beetroot red and expanded spirulina extract as new natural color sources.

Swapping in a natural pigment rarely works as a straight substitution. Beetroot red, spirulina extract, and turmeric extract tend to fall short of a synthetic dye’s tinting strength unless the particle size is right — coarser particles scatter light unevenly and can settle out of a beverage, leaving an inconsistent shade.
